Giancarlo Perbellini

He was born in Bovolone, in the Province of Verona in 1964. Mr. Perbellini attended the ‘Hotel Management Institute' in Recoaro Terme. His initial experience as a young chef was at the restaurant, ‘Marconi' and afterward at the ‘Dodici Apostoli' restaurant in Verona. A fundamental step in his culinary training was his experience at the ‘San Domenico' restaurant in Imola, where classic French cuisine led him to develop a specific interest in France.

It was natural for him, at that point, to look for professional opportunities in France. He worked there at three different renowned restaurants: ‘Le Taillevent-Hotel Ambroisie' in Paris, ‘La Terrasse' in Juan les Pins, and at ‘Chateau d'Esclimont' in Saint-Symphorien-le-Château.

He later decided to go back home and open his own restaurant ‘Perbellini' in Isola Rizza, with the support of his wife Paola. The restaurant was soon awarded two Michelin stars. His cuisine is based on the solid know-how of culinary techniques and the absolute respect of top-quality raw materials. His menu reveals his talent for heightening the senses.
